Drop #3: El Placer Bourbon Rosado

This offering is a traditionally washed processed Pink Bourbon with a twist. Sebastian Ramirez is a producer everyone should know for his wild processing techniques and now, varietal growing on his estate at El Placer. Sebastian's Pink Bourbon is a wonderful example of "happy coffee" growing on the land in Quindío, Colombia. The light profile is reminding us of lemonade, green tea, red berries, white florals, with a lychee sweetness. At ultralight, it has a delicate white tea body, mellow but sweet, with notes of lychee, gummy worms, and a floral finish of honeysuckle and lavender.

Farm and Producer

Sebastian is a fourth generation farmer in Quindio, Colombia. He originally stuck to traditional coffee farming, but one day, ventured into fermentation. Now, he is famously known for his carbonic maceration process and is a mentor for other specialty coffee producers. Today, he is actively working on getting the best out of varietals typically thought to not grow well in Colombia, like SL-28, Wush Wush and Typica Mejorado.

Coffee Varietal and Processing

This coffee undergoes no in-cherry fermentation. It is depulped almost immediately after harvesting and then, fermented for 24 to 36 hours before being washed and dried on patio beds. Fermentation happens with some added yeast and the coffee mucialage, which adds extra florality. Drying happens in direct sunlight at controlled temperatures around 40 celsius and then, in the shade for 5 days.

Drop Variants

Drops are typically prepared in two formats: a standard 100g / 200g bag offering at your preferred roast level or as a roast experiment.

  • Standard bag lets you support the producer, exporter, and the project without having to buy and drink coffee you're less interested in. You still get to observe and critique our roast methods at your preferred lightness but in larger quantities.
  • Roast experiment lets you participate in 3 blind tastings of 60g bags to evaluate 3 different roast curves. After the drops have been released, profile info and our own sensory feedback will be shared alongside any collected feedback from tasters.

Note that roast level selection does not apply to experiments sent out.

When will I get my order?

We work as quickly as possible to roast and ship your coffee within a week of your order placement. Times vary on roaster rental availability and our limited roasting schedule. We typically roast on two subsequent days twice a month. Once your order has shipped, you will receive an email with further information. Delivery times vary on location.

Return policy

Because we are selling an agricultural product with limited shelf life, we do not accept returns. However, our goal is for every customer to be absolutely satisfied with their purchase.
