Drop #2: Finca Hoyo Rico Washed Chiroso

This month we are featuring Finca Hoyo Rico's Washed Chiroso. Shade grown at over 2100 masl, Arnulfo Caro's Chiroso represents "terroir coffee". Base Coat is partner with Unblended in sourcing this coffee. Purchase this coffee as an experiment looking at airflow's effect on weight loss or as a standard 200 gram (7oz) bag at your preferred roast level. We launched this coffee as four different profiles, which was a bit ambitious in hindsight. In most profiles, we found the same red tea body, vanilla sweetness, tropical acidity, red berries, and clove-like finish.

Farm and Producer

It was easy to fall in love with their family’s story. Arnulfo is a miner turned coffee producer. The farm was partly family inheritance but also, a career transition opportunity. His brother inspired him to make the transition, not just to coffee, but specialty coffee. So, he left emerald mining to begin coffee producing. At first, martha’s focus was on their daughter, but her role has grown to overseeing the coffee processing. Together with thier children, Martha and Arnulfo manage all of Finca Hoyo Rico’s Production. In a short 3 harvests, their coffee has already garnered attention worldwide. They primarily grow chiroso and geisha. They are perfect for the base coat project; new producers taking a risk changing careers and exploring innovation through mentorship with unblended and its mentors.

Coffee Varietal and Processing

A recent discovery, Chiroso is an exciting varietal because of its rarity and fun flavor profile. Solely grown in Urrao, it has made some name for itself on the competition stage. We love this varietal because it carries some of the same tropical qualities of pink bourbon, but without the ripping limeade/lemonade acidity. It also commonly has mango and stone fruit qualities reminiscent of its proposed parent, Ethiopian landrace.

95% of cherries are picked at peak ripeness. In-cherry coffee is fermented in open containers for 4 days. Then, it gets depulped and fermented a second time in stainless steel tanks for another 8 days. Coffee is laid out in shaded sun bed driers for 2-3 weeks until ~10% moisture content.

Drop Variants

Drops are typically prepared in two formats: a standard 100g / 200g bag offering at your preferred roast level or as a roast experiment.

  • Standard bag lets you support the producer, exporter, and the project without having to buy and drink coffee you're less interested in. You still get to observe and critique our roast methods at your preferred lightness but in larger quantities.
  • Roast experiment lets you participate in 3 blind tastings of 60g bags to evaluate 3 different roast curves. After the drops have been released, profile info and our own sensory feedback will be shared alongside any collected feedback from tasters.

Note that roast level selection does not apply to experiments sent out.

When will I get my order?

We work as quickly as possible to roast and ship your coffee within a week of your order placement. Times vary on roaster rental availability and our limited roasting schedule. We typically roast on two subsequent days twice a month. Once your order has shipped, you will receive an email with further information. Delivery times vary on location.

Return policy

Because we are selling an agricultural product with limited shelf life, we do not accept returns. However, our goal is for every customer to be absolutely satisfied with their purchase.
