Produced by Edwin Noreña at Campo Hermoso in Quindio, Columbia, this green coffee was expensive (~$20/lb), but what makes it special is not the price. Competition coffee is selected and roasted to showcase two things over any other details: clarity of "reference-able" flavors and sweetness. The nordic profile reminds us of plum, cinnamon, spearmint, and lime. The light profile is most similar to lime mojito, sucker candy, lavender.

Farm and Producer

Finca Campo Hermoso has been in Edwin's family for over three decades. When his father passed, Edwin took lead on the farm and refocused on producing distinctive and innovative specialty coffee. Today, he is recognized as a leading innovator in Colombian specialty coffee. In addition to managing the farm, Edwin is also a certified Q Grader, Q Processor, and a Cup of Excellence judge. He travels all over the world mentoring other coffee producers on how to up-level their processing. He is most talked about for his exceptional and unique fermentation processing methods. This coffee is a great example of why his coffee is often in conversation.

Coffee Varietal and Processing

This coffee is a Sidra varietal of just the ripest cherries -- above 24 degrees on the brix scale. Coffee seeds are submerged in water for fermentation and flushed with carbon dioxide in order to quickly create an anaerobic environment for fermentation. Specific bacteria thrives in this environment too. Every producer has variation to their carbonic maceration process, but I've found it typically amplifies any fruit and floral characteristics the coffee has. Often times, more traditional flavors now taste "jazzy" and perfume-y.

Drop Variants

Drops are typically prepared in two formats: a standard 100g / 200g bag offering at your preferred roast level or as a roast experiment.

  • Standard bag lets you support the producer, exporter, and the project without having to buy and drink coffee you're less interested in. You still get to observe and critique our roast methods at your preferred lightness but in larger quantities.
  • Roast experiment lets you participate in 3 blind tastings of 60g bags to evaluate 3 different roast curves. After the drops have been released, profile info and our own sensory feedback will be shared alongside any collected feedback from tasters.

Note that roast level selection does not apply to experiments sent out.

When will I get my order?

We work as quickly as possible to roast and ship your coffee within a week of your order placement. Times vary on roaster rental availability and our limited roasting schedule. We typically roast on two subsequent days twice a month. Once your order has shipped, you will receive an email with further information. Delivery times vary on location.

Return policy

Because we are selling an agricultural product with limited shelf life, we do not accept returns. However, our goal is for every customer to be absolutely satisfied with their purchase.
