This coffee is full of citrus, floral and herbal character. Fresh mint flavor makes brews reminiscent of lime mojito. Produced by Edwin Norena at Campo Hermoso in Quindio, Columbia, this green coffee was expensive (~$20/lb), but what makes it special is not the price. Competition coffee is selected and roasted to showcase two things over any other details: clarity of "reference-able" flavors and sweetness.
About this Coffee:
This coffee is a Sidra varietal of just super ripe cherries -- above 24 degrees on the brix scale. Coffee seeds are submerged in water for fermentation and flushed with carbon dioxide in order to quickly create an anaerobic environment for fermentation. Specific bacteria thrives in this environment too. Every producer has variation to their carbonic maceration process, but I've found it typically amplifies any fruit and floral characteristics the coffee has. Often times, more traditional flavors now taste "jazzy" and perfume-y.
