Eliza Anaerobic Washed Typica Mejorado
Since Choco Vilcamundo's (CVM) inception in 2016, they've already placed in top 10 in Ecuador CoE and Qima auctions multiple times. Just this year they had 7 coffees from their three farms place in the final top 30, which required scores of 87+ to enter. Coffee excellence is rooted in their farming practice. We got the chance to cup this coffee, alongside a green tip Gesha we also sourced from Finca Eliza and immediately fell in love with their flavor profiles, complexity and phenomenal structure. After hearing more about Finca Eliza, CVM, as well as Martin and Bernie, we felt trust and saw a good fit for a purchasing green at this higher price point. This lot features their double ferment (3x3) process, which is a 2 to 3 day fermented cycle in the cherry, and then 3 days in honey, which then gets washed, and dried to 11%.
Unsuspectingly, this cup profile is both, beautifully touched by in-fruit character and very clean for a "double anaerobic"-staged coffee. What does show up is a much creamier body than a traditionally washed, which balances out the comforting red tea character that reminds us of hibiscus. The acid is discerningly pink, and similar to passionfruit. Along with cream of coconut, we get plenty of sweet stone fruit in the layered body. This coffee is remarkably rich and well-structured. It also roasted a bit differently to our normal profiling, which let us find an ultralight in an unsuspecting curve. It's our second most expensive buy to date, but we're really honored to get to showcase specifically what Martin Kutsch and Bernie Uhe have gotten to build together. Martin hopes to continue to build a legacy for his daughters and we're thrilled to support that.
We roasted last batch on 6/6. So, all orders will go out with that roast date.

Drops are typically prepared in two formats: a standard 100g / 200g bag offering at your preferred roast level or as a roast experiment.
- Standard bag lets you support the producer, exporter, and the project without having to buy and drink coffee you're less interested in. You still get to observe and critique our roast methods at your preferred lightness but in larger quantities.
- Roast experiment lets you participate in 3 blind tastings of 60g bags to evaluate 3 different roast curves. After the drops have been released, profile info and our own sensory feedback will be shared alongside any collected feedback from tasters.
Note that roast level selection does not apply to experiments sent out.
When will I get my order?
This is a side project that isn't in a place to pay our bills at the moment. We're actively trying our best in the two days we work on Base Coat a week to fulfill as quickly as possible. Volume has gone significantly up recently -- a great problem to have -- and we're doing our best to adapt. We roast every two weeks and try to get orders out within a week of your order placement. At latest, it takes us two weeks and if that is the case, expect an extra item in your bag as an apology.
Our times vary on roaster rental availability and our limited roasting schedule. We typically roast on two subsequent days twice a month. Once your order has shipped, you will receive an email with further information. Delivery times vary on location.
Return policy
Because we are selling an agricultural product with limited shelf life, we do not accept returns. However, our goal is for every customer to be absolutely satisfied with their purchase.
